Impruneta is noted most of all for its production of terra cotta. Its manufacturers continue to be symbols of the icty and have contributed to making the city famous worldwide. Workers at the furnaces of Impruneta supported the architect Filippo Brunelleschi and his workers also from a gastronomic point of view, creating a substantial culinary creation, peposo. It is a stew of beef cooked in wine and seasoned with pepper in abundance (henche the name peposo which literally translates to “peppery”), cooking for several hours in the kilns together with the clay bricks. This delicious dish undoubtedly contributed energy to the workers building a monuments such as the Dome of Santa Maria del Fiore!
The village grew around the delightful Piazza Buondelmonti that surrounds the Basilica di Santa Maria, built on the site where legend recounts that an icon of the Virgin Mary painted by St. Luke was found and was hidden during persecution against the Christians.
